- 1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

- 1 small onion, finely chopped
- 3 cloves garlic, minced

- 1 can (15 oz) crushed tomatoes
- 1/2 cup heavy (or coconut) cream
- 2 teaspoons garam masala
- 1 teaspoon cumin powder
- 1 teaspoon chili powder (more or less to taste)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until it turns soft and golden, about 3-4 minutes.
Add the minced garlic and grated ginger. Sauté for another minute until fragrant.
Add the chicken pieces to the skillet and cook until browned on all sides, about 5 minutes.
Pour in the crushed tomatoes, stirring to combine. Add the garam masala, cumin, chili powder, salt, and pepper. Let this simmer for about 10 minutes.
Stir in the cream and let it simmer for an additional 5 minutes, allowing the sauce to thicken slightly.
Taste and adjust the seasoning if needed.
Garnish with fresh cilantro if desired, and serve hot with rice or naan!
